Ultimate Peanut Butter Cookies
1/2 cup peanut butter chips
1/2 cup smooth peanut butter (not natural)
1 cup unsalted butter, at room temperature
1/2 cup light brown sugar
1/2 cup sugar
1 large egg
2 tsp vanilla
1 tsp salt
2 1/2 cups flour
Heat oven to 375.
Microwave the peanut butter chips at medium heat for 1 minute.
Stir the chips and microwave for another minute until melted; stir until smooth.
In large bowl, beat together the melted chips, peanut butter, butter, and both sugars with an electric mixer on medium-high speed until smooth and fluffy.
Blend in egg, vanilla and salt.
Gradually beat in the flour on low speed until a firm dough forms.
Working with half the batch at a time, roll out dough to 1/4-inch thick on a flour dusted surface and a lightly floured rolling pin.
Cut our cookies with a 3-inch round (or other shapes) biscuit or cookie cutter.
Place on greased baking sheet.
Repeat with all cookie dough until all of it is used.
Bake the cookies until set and slightly golden brown, about 8 to 10 minutes.
Cool on sheets for 1 minute, then transfer to wire rack to cool completely.
Store in airtight container at room temperature for up to 3 days.
